Smoked Breakfast Jalapeno Poppers
We are down at Mosquito Lagoon, Florida today and smoking some breakfast Jalapeno Poppers on the Pit Barrel Cooker. We’ll slice jalapenos in half, fill them with egg, wrap in bacon and then finish with some Mexican Cheese. Easy and delicious!
Ingredients
- 5 Jalapenos
- 2 eggs
- 5 pieces of bacon
- 10 tsp Shredded Mexican cheese
Recipe Instructions
- Slice the jalapenos in half and remove the seeds.
- Put two eggs in a cup or bowl and blend the egg white and yellow together using a fork.
- Pour egg in a jalapeno half and wrap in bacon. Repeat for each jalapeno half. Wrapping in bacon before setting the jalapeno on your work surface will help to keep the jalapeno level (and prevent the egg from running out).
- Place the jalapenos on the pre-heated Pit Barrel Cooker.
- Cook until the eggs are firm and bacon is done. For this cook, it took 50 minutes.
- Place a teaspoon of cheese on each jalapeno and cook until cheese is melted (about 5 minutes).
- Serve!
