Florida Stone Crab Claws with Mustard Sauce
Today I’ve got some fresh Florida Stone Crab Claws and we will make my favorite mustard dipping sauce. When you purchase Stone Crab Claws from the seafood market or grocery, they are already pre-cooked. Stone Crab Claws are cooked as soon as they reach the dock. This helps keep the crab meat from sticking to the claws.
Stone Crabs are also a 100% renewable resource. The crab is caught alive, then one claw is removed. The crab is returned to the ocean where it regrows a new claw.

Mustard Sauce Ingredients (easily makes enough dipping sauce for 2 lbs of crab meat)
- 1 Cup Mayonnaise
- 3 Tablespoons Stone Ground Mustard
- 2 Tablespoons Horseradish
- Salt & Pepper to Taste
- Juice of 4 Key Limes (You can substitute 2 limes)
- Hot Sauce to Taste
Recipe Instructions
Mix all mustard sauce ingredients in a bowl. Taste for salt and pepper. Chill for 1 hour.
To crack the Stone Crab Claws, take a butter knife handle or the back of a spoon and tap the Crab Claws. This will crack the claws without damaging the meat. If you use traditional crab claw crackers, you may “drive” the shell down into the meat.
